Varietal composition: Negroamaro 80% - Malvasia nera 20%.
Vineyards location: Cellino San Marco (BR).
Training: Alberello (5.000 stumps).
Harvest: First/second decade of September.
Vini cation: After the crushing and de-stemming, the must remains in maceration in
its skins for 5-8 days. Soft pressing and nal fermentation in steel tanks at controlled temperature. Malolactic fermentation in Allier oak barriques and maturation on thin dregs for about 12 months.
Aging: In stainless steel - barrique.
Tasting notes
Bright and intense red ruby. At the wide and complex olfaction, stand out fruity marks of blackberry jelly and dried g followed by a withered bouquet of violets and roses. The nal discerns blonde tobacco from hints of leather and sweet spices. The taste is surprisingly balanced between softness, tannicity, freshness, and sapidity. Ends long and persistent.
Food pairing
Hare cacciatore, coda “alla vaccinara”, roe deer cooked in aromatic herbs.
According to tradition: grilled lamb, tripe in tomato sauce with potatoes, pallone cheese of Gravina.
Serving temperature: 18°C.

We reserve the right to request identification before processing your order.
Quattro Mori ships orders from our Sydney warehouse, Monday to Friday. Depending on your location, we select the services of Anonymus Wine Distribution, Australia Post and various logistics companies and their affiliates. For delivery in Sydney , please allow three to five working days and five to seven for most Australian cities, rural and regional areas might take longer.
Please note that in extreme heat conditions we reserve the right to hold your order until such time as the weather is favourable to transport it.
Delivery Charges
We offer free delivery in the Sydney metro area for all orders over $150. For all the others, delivery charges apply. This charge (if applicable) will be applied at the time of checkout according to your post code.
Returns
If you have ordered the wrong item, please contact us to arrange a return. Return shipping for ordering the incorrect item will be at the expense of the customer. Quattro Mori will issue a full refund for the goods within 7 days of receiving the intact goods.
If your order has been packed incorrectly by Quattro Mori, please notify Quattro Mori strictly within 48 hours of receipt of the shipment. Quattro Mori will request that you return the incorrect items and we will refund the return shipping costs.
